The Origin
Every bowl we serve traces its lineage back over a century to the bustling, high-altitude markets of Lanzhou in China’s Gansu province. Lanzhou beef noodle making is not just a recipe; it is a strict, generational discipline. It takes years of rigorous practice for a master chef to read the dough, understanding exactly how temperature and humidity affect its elasticity.
We brought 1915 Lanz Noodle to Edinburgh to preserve this exact, uncompromised heritage—honoring the silent patience and relentless physical mastery required to turn simple flour and water into a culinary art form.




Our Philosophy
CRAFTSMANSHIP
Hand-pulling noodles is a dance between strength and molecular physics. Our chefs manually knead and slam the dough to align the gluten strands perfectly, giving the noodles their signature Q-bounce (chewiness). We don't believe in a one-size-fits-all meal. Because we pull every single order entirely from scratch on the counter, you can customize your experience—choosing from ultra-thin capellini strands that absorb the rich broth instantly, to thick, wide Biang Biang belt noodles designed for heavy, savory sauces. This is human craftsmanship you can feel in every bite.

We designed 1915 to bring that exact communal warmth to Edinburgh. Through our open-kitchen design, our guests share the energy of the steam and the rhythm of the chefs slamming dough, transforming a simple meal into a collective sensory experience.

True authenticity cannot be engineered with modern shortcuts. We reject instant powder bases and artificial flavor enhancers. Instead, we honor ancestral techniques by extracting deep, complex umami directly from premium beef marrow bones, slow-simmering them for hours alongside a precise, guarded blend of imported Northwest Chinese spices. We don't adapt the flavors to fit trends; we preserve the exact, uncompromising culinary lineage of Lanzhou.

An authentic hand-pulled noodle is a living element; it must be stretched, plunged into boiling water, and served immediately to retain its peak elasticity and springy bite. THE STANDARD OF 1915
The year 1915 marks a monumental turning point: the formal standardization of the perfect Lanzhou beef noodle soup. True authenticity is strictly governed by the legendary "Five Colors and Clear Standards", a meticulous culinary law that we execute every single day:

一清 (One Clear): Our signature beef broth, slow-simmered for over 8 hours with marrow bones and traditional spices, must achieve an intensely flavorful clarity—never cloudy.
